Garlic Shrimp Stir Fry with Brown Rice

Ready in minutes, this delicious Asian-inspired dish is a quick and easy way to satisfy your hunger! The broccoli provides a wonderful crunch, while loading up on calcium and vitamin K while the brown rice provides your "good carb" intake and great fiber. Use this recipe to plan ahead when doing your weekly meals or for entertaining guests for dinner. Recipe serves 4.



𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦


• 500 grams large shrimp, peeled and deveined

• 2 cups brown rice

• 2 cloves garlic, minced

• 2 cups broccoli florets (500 g)

• ½ onion, diced

• 1 tablespoon soy sauce

• 2 tablespoons sesame oil, divided

• ½ teaspoon salt


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡


Heat 1 tablespoon of sesame oil in a large, skillet over medium heat. Add the shrimp and season with ¼ teaspoon of the salt. Fry for a minute on each side. Remove the shrimp from the pan and add remaining tablespoon of sesame oil.


Toss in the onion and remaining ¼ teaspoon of salt, sautéing for a few minutes until soft. Add in the broccoli, minced garlic and soy sauce. Sauté for 30 seconds until garlic is fragrant. Toss the shrimp back into the pan and mix to coat the shrimp for about 1 minute. On the side, cook the rice separately and then serve your shrimp and broccoli mixture on a bed of rice. Enjoy!
