Kitchari Bowl

Dig into this pre-workout meal for a stamina boost of healthy, filling carbs along with a host of other benefits! Kitchari is an "ayurvedic" dish which helps reset your body and ignite your metabolic fire. 🔥 This bowl is packed with healthy grains, vegetables, zesty ginger and fragrant spice. It helps cleanse accumulated toxins, improves digestion and eliminates pent up congestion from the body. It's also great for making in big batches for weekly meal planning. Recipe serves two.




𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦


• 1 cup basmati rice

• 1 cup mung dal lentils (split yellow)

• 6 cups of water

• 1 tsp ghee

• ½ tsp cumin powder

• ½ tsp black mustard seeds,

• ½ tsp whole cumin

• ½ tsp turmeric powder

• ½ tsp coriander

• 1 to ½ inch of ginger root (chopped or grated)

• salt and pepper

• handful of fresh cilantros

• 1 ½ cups assorted vegetables (cauliflower, carrots, zucchini, green beans), vegetable broth and water.


𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡


Wash the rice and dal separately in at least 2 changes of water. Add the 6 cups of water to the rice and dal and cook covered for about 20 minutes until it becomes soft.


While that is cooking, chop up any vegetables of your choosing into smallish pieces. Add the vegetables to the cooked rice and dal mixture and cook 10 minutes longer.


In a separate saucepan, sauté the seeds in the ghee until they pop. Then add the other spices. Stir together to release the flavours. Stir the sautéed spices into the cooked dal, rice, and vegetable mixture. Add the mineral salt and chopped fresh cilantro and serve.
