Low-Fat Breakfast Waffles

• 2 eggs

• 2 cups of spelt flour

• 1 ¾ cup of milk

• ½ tsp vanilla extract

• 1 tbs of baking powder


Preheat the waffle maker and mix all ingredients together in a bowl until smooth. Grease the iron with some coconut oil and pour the mix onto the waffle iron until golden brown. Serve hot with your choice of toppings and enjoy!
