Quinoa and chickpeas combine forces for a "good carb" knockout in this pre-workout treat. Load up on vitamins, minerals and fresh zestiness with our signature beetroot, chickpea and quinoa power bowl! It looks pretty and tastes even better.
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦 (per bowl)
• 1 small beetroot
• 1 cup cooked quinoa
• ½ cup cooked chickpeas (homemade, or canned and drained)
• ½ cup pomegranate seeds
• 2 tbsp sunflower seeds, or pine nuts
• ½ cup chopped parsley
𝗣𝗥𝗘𝗣𝗔𝗥𝗔𝗧𝗜𝗢𝗡
Roast or boil the beetroot and peel. Cut into slices or bite-sized chunks. Combine with remaining ingredients and dress the power bowl with olive oil, balsamic vinegar, and salt and pepper to taste.
