Quinoa and chickpeas combine forces for a "good carb" knockout in this pre-workout treat. Load up on vitamins, minerals and fresh zestiness with our signature beetroot, chickpea and quinoa power bowl! It looks pretty and tastes even better.

⢠1 small beetroot
⢠1 cup cooked quinoa
⢠½ cup cooked chickpeas (homemade, or canned and drained)
⢠½ cup pomegranate seeds
⢠2 tbsp sunflower seeds, or pine nuts
⢠½ cup chopped parsley

Roast or boil the beetroot and peel. Cut into slices or bite-sized chunks. Combine with remaining ingredients and dress the power bowl with olive oil, balsamic vinegar, and salt and pepper to taste.
